- Wash the leaves and use potable water and clean equipment. Cool promptly and keep the syrup at or below 4 °C. Do not assume homemade syrup is shelf-stable. Discard mouldy, unintentionally fermenting or improperly stored batches.

The aroma of fragrant rice

- 2-Acetyl-1-pyrroline (2AP) is a major contributor to pandan’s fragrance, with notes also found in jasmine rice, basmati and popcorn. Bruising or cooking the leaves releases their aroma.

- A study extracted 2AP using an ethanol–water mixture assisted by ultrasound. For Odo’s kitchen, a fresh-leaf infusion is a simple first approach. Distillation and concentrated extracts remain trials to develop; no local performance is documented.
The culinary suggestion is a practical adaptation, not the published experimental protocol.

- In a 2023 randomized crossover trial, a beverage containing 2 g of dried leaves and 25 g of glucose did not improve blood-glucose regulation in 13 healthy adults. This result does not validate pandan as a diabetes treatment.
