- Syrup is already made at Odo. The recipe below proposes a small reproducible batch; it is not presented as JB’s personal formula. Pairings to try include coconut, rice and chocolate desserts.

- Fresh leaves: 10 g, removed after infusion. Potable water: 250 g, plus top-up. Sugar: 250 g. Weigh 250 g of strained infusion; add 250 g sugar. Final target: 500 g syrup. Sugar:infusion ratio = 1:1 by mass; added sugar = 250/500 = 50%. Leaves:initial water loading = 1:25.
- Method
- 1. Wash the leaves, cut them and bruise lightly. 2. Add to the 250 g water; bring to a gentle simmer for 5 minutes, then turn off the heat and steep covered for 10 minutes. 3. Strain finely, remove the leaves and top up with hot potable water to obtain 250 g infusion. 4. Dissolve the 250 g sugar in the warm infusion. Avoid prolonged reduction; if needed, replace evaporated water with boiled potable water to return to 500 g total. 5. Cool promptly in a clean container in an ice-water bath, transfer hygienically, date and refrigerate immediately.
- Conditions
- Keep at or below 4 °C and use within 72 hours as a conservative working limit; freeze surplus portions promptly. If the aroma is too light, try 15 g leaves in the next batch, keeping the 250 g infusion and 250 g sugar unchanged. Record the mass, time and result.
Suggested starting formula, not yet tested at Odo and distinct from the syrup already made by JB. The 72 hours are not a validated shelf life. The 500 g is a mass, not a volume of 500 ml. No yield, result or batch number is assumed.
